okay so my glucose has been low and my doctor is worried that if I don't start a diabetic food journal and start just eating better then I will become type two diabetic. I am currently Hypoglycemic and have to watch myself and when I feel dizzy or have a headache/migrane eat something with Natural sugars like fruit or a candy bar. Dieting is good but I guess I just need to do it the healthy way especially so I don't have a kiney failure relapse again or something worse. I know one thing is for sure I am not having anymore kids. Gaining that much weight again would kill me. This is my recipe for dinner tonight.

Low-fat chicken flavored with pineapple tidbits and yogurt.

Servings Ingredients
1lb boneless skinless chicken breasts (4 breast pieces)
8oz sugar free, nonfat apricot mango yogurt
1/4cup fresh cilantro, minced
1/2cup canned pineapple tidbits, drained
1butter flavored cooking spray
Directions
1 In a small bowl, mix mango yogurt with cilantro and pineapple tidbits. Cover and refrigerate until needed. Stir the mixed sauce before serving.
2 Coat a nonstick frying pan with butter-flavored cooking spray.
3 On medium heat, fry chicken breasts for 10 to 15 minutes, turning as necessary, until chicken is cooked.
4 Serve chicken hot, drizzled with mixture of mango yogurt sauce.
Additional Information
Serve with vegetables and cooked or flavored rice.
